Red tart pitted cherries are one of my favorite fruits since childhood. I remember mom taking some from the freezer for a yummy cherry pie. We would take individual cherries, still partially frozen and dip them in a little sugar for a tasty treat. It would make all of the time of picking and pitting cherries from our tree well worth while. That tangy flavor in our Cherry Jelly adds to scones, biscuits and cookies.
But this luscious trifle makes an even better use of our jelly and fresh fruit. Wipe a wedge of lemon around the edge of individual glass dishes. Dip the dish into sugar moving it around until the rim is covered in sugar, set to one side. Place slices of pound cake in the bottom of the each dish. Spoon raspberries over the cake, then spoon a layer of jelly into the dishes. Top with custard, then add whipped cream and decorate with fresh raspberries, chocolate or nuts. Chill until ready to serve.
